Job Overview

The Production Manager in a biscuit and cookie factory oversees daily plant operations, ensures strict product quality and food safety standards, manages a multi-shift workforce, and meets production targets efficiently while minimizing material waste and controlling operational costs.

Detailed Key Responsibilities

1. Production Planning & Execution

  • Master Scheduling: Translate sales forecasts into actionable daily, weekly, and monthly production schedules.
  • Line Balancing: Allocate raw ingredients, machinery, and labor across different processing to prevent bottlenecks.
  • Capacity Utilization: Monitor and improve Overall Equipment Effectiveness (OEE) to maximize throughput and capacity.
  • Inventory Coordination: Partner with procurement to ensure a steady supply of flour, sugar, fats, and packaging materials without overstocking.
  • Changeover Management: Minimize downtime during product switches

2. Food Safety, Quality Control & Compliance

  • Regulatory Standard Compliance: Enforce strict adherence to global food safety standards like HACCP, SQF, BRC, or FSSC 22000.
  • Good Manufacturing Practices (GMP): Audit the factory floor daily to guarantee impeccable hygiene, allergen control, and sanitation.
  • Traceability Protocols: Oversee batch coding and tracking systems to ensure instant traceability of raw ingredients and finished lots.
  • Defect Minimization: Colaborate with Quality Assurance (QA) to monitor baking parameters like moisture levels, color, and thickness.
  • Waste Mitigation: Identify root causes of product defects (e.g., burnt batches, broken cookies) and implement swift corrective actions

3. Team Leadership & Workforce Management

  • Staff Scheduling: Manage shift rotations, overtime, and seasonal labor requirements for a 24/7 or multi-shift operation.
  • Skill Development: Design and execute training programs for operators.
  • Performance Evaluations: Set clear Key Performance Indicators (KPIs) for shift supervisors and conduct regular objective reviews.
  • Conflict Resolution: Foster a collaborative, high-morale work culture and address labor or disciplinary issues promptly.
  • Succession Planning: Identify high-performing floor workers and mentor them for future leadership roles.

4. Maintenance & Engineering Coordination

  • Preventative Maintenance: Schedule routine servicing for mixers, laminators, continuous band ovens, cooling conveyors, and flow-wrappers.
  • Breakdown Resolution: Coordinate with the engineering team for rapid-response troubleshooting during unexpected mechanical or electrical failures.
  • Capital Expenditure (CapEx): Assist in evaluating, testing, and commissioning new automated baking or packaging machinery.
  • Facility Sanitation: Oversee Clean-In-Place (CIP) processes and deep-cleaning schedules for baking bands and molders.

5. Cost Control & Process Optimization

  • Budget Oversight: Manage the manufacturing department's operational budget, tracking labor costs, energy use, and material yield.
  • Lean Manufacturing: Apply Continuous Improvement methods like 5S, Six Sigma, or Kaizen to eliminate waste on the production floor.
  • Energy Management: Optimize oven heating profiles and cooling systems to reduce gas and electricity consumption.
  • Yield Optimization: Track dough-to-finished-product giveaway metrics to ensure recipes are executed with maximum financial efficiency.

6. Health, Safety & Environment (HSE)

  • Hazard Identification: Conduct regular risk assessments to eliminate floor hazards, such as slick surfaces or unguarded machinery.
  • PPE Enforcement: Ensure 100% compliance with personal protective equipment, including hairnets, steel-toe boots, and hearing protection.
  • Incident Reporting: Investigate any workplace accidents, document root causes, and implement immediate safety revisions.

 

Requirements & Qualifications

Required Qualifications & Skills

  • Education: Bachelor's degree in Food Science, Food Engineering, or a related field.
  • Experience: Minimum 8 years of manufacturing experience, with at least 3 years in a food production or industrial bakery leadership role.
  • Technical Skills: Deep knowledge of automated baking lines, industrial mixing, continuous band ovens, and packaging systems.
  • Soft Skills: Strong leadership, sharp analytical problem-solving abilities, and high-level time management skills.
