Main responsibilities
- Monitor and control food, beverage, and operational costs to ensure they remain within approved budgets and targets.
- Conduct daily and monthly cost analysis and variance reporting for Food & Beverage and other operational departments.
- Review food and beverage consumption, wastage, spoilage, transfers, and complimentary items.
- Conduct regular and month-end physical inventory counts and reconcile results with accounting records.
- Investigate discrepancies between physical stock and system balances and recommend corrective actions.
- Calculate and monitor food and beverage cost percentages, gross profit margins, and departmental profitability.
