Main responsibilities

Monitor and control food, beverage, and operational costs to ensure they remain within approved budgets and targets.
Conduct daily and monthly cost analysis and variance reporting for Food & Beverage and other operational departments.
Review food and beverage consumption, wastage, spoilage, transfers, and complimentary items.
Conduct regular and month-end physical inventory counts and reconcile results with accounting records.
Investigate discrepancies between physical stock and system balances and recommend corrective actions.
Calculate and monitor food and beverage cost percentages, gross profit margins, and departmental profitability.
